Simple homemade guacamole recipe

I love avocado. So it makes sense that I also love guacamole. But be it known, I am actually a guacamole snob and don't rate the shop bought crap. For me, it has to be homemade. If you are thinking, 'I don't have time for that', it actually takes less than ten minutes to make. Probably 5 if you're speedy.


homemade is so much better than the shop bought stuff! 



Guacamole is also actually a power house of vitamins and nutrients and has a heap of health benefits...


  • avocados - eat this green gem for great skin and also for protecting your heart
  • tomatoes - a great antioxidant, and choc full of vitamin A, C and E
  • red onion quercetin in red onions helps scavenge those free radicals messing in your body 
  • lemon - the citric acid can help reduce acne 


Ingredients...


2 ripe avocados
2 ripe tomatoes
1/2 small red onion (chopped finely)
1 small handful of parsley or coriander
1 tablespoon of lemon juice
1 glove of garlic (crushed)
olive oil
pepper

This recipe is so easy to make... 

in a mixing bowl, scoop out the flesh of the avocado and mash with a fork - I like quite a chunky guacamole but this is your preference


this recipe is so simple to male 

To the avocado, add the chopped tomatoes. Before placing them in the bowl, I gave them bit of a squeeze to rid the excess juice, as no one likes a watery guacamole

Add the chopped onion, garlic, lemon juice and herbs - I prefer to use parsley but a recipes online suggest coriander

loving the rainbow of vegetables! 


Mix well and season with pepper 
and a healthy drizzle of olive oil





goes well with salads, grilled chicken and as a side 
Once made, cover with clingfilm and leave to chill in the fridge for a few hours before serving. If you pop it in an airtight container and it should last a couple of days.

A top tip for you...
once made, keep a stone in the guacamole as this stops it going brown and discolouring (I don't know how, but it works!)
