They require no baking and is a simple "bung in a food processor and mix together" recipes so score a "0" on the fuss scale. A tasty blend of protein, nuts, spices and of course, carrots, these protein balls are delicious, moist and fruity.

All you need is:
12 - 15 dates
1/2 pistachios (with the shells off obvs)
1/2 cup almonds
3 grated carrots
1 tsp ground cinnamon
1/2 tsp mixed ground spice
dash of nutmeg
2 scoops of vanilla protein
desiccated coconut for the outside
Place all the ingredients (except the coconut) into a food processor and blitz well until all the nuts are chopped. It is up to you how finely you want the nuts to be chopped - I went for a slightly chunky texture)
On a flat plate, make sure you have a bit of desiccated coconut laid out
Scoop out a small handful of the mixture and roll in the palm of your hands into a ball. Warning - this is bloody messy
Once you have your ball shape, roll the mixture on some of the coconut to form an even coating
Pop then in the freezer to harden up for about ten minutes and enjoy!
Keep them in an air tight container in the fridge, and they'll happily last a week (that's if you can resist eating them). You can also keep them in the freezer for a freshness that lasts even longer.
