I
love pizza but let’s be honest it isn’t on the list of nutritious food is it?! I’ve
been experimenting with making low carb pizza bases recently and I got to
admit, some have been a disaster, such as my ‘soya flour’ base. But this recipe
but this recipe from Nic’s Nutrition is tried, tested and
an total success!
Don’t
be put off by the main ingredient – yes it is a big fat cauliflower, but obnce
you add all your toppings on to make your pizza, you’ll never notice it. It’s
purely there to act as ‘breadcrumbs’.

This
recipe without toppings is less than 200 calories, 6g carb, 23g protein and
only 8g fat!!!
And
you’ll easily get two medium sized pizza bases from this batch.
You’ll
need…
1
medium sized cauliflower, about 380-400g
½
cup grated cheese*
1
egg
1
egg white
¼
- ½ cup coriander
4
cloves of garlic, crushed
Dried
mixed herbs
Tomato
puree paste
Toppings
of your choice (I went for mushroom, pepper, mozzarella, red onion, chicken,
chorizo)
*use
extra mature so you use less
Pre
heat the oven to 220*c
Chop
the cauliflower up, breaking it up into the florets. Wash but make sure you pat
them dry properly.
Add
them to the food processor and blitz well until it resembles breadcrumbs.
Add
the cauliflower to a large mixing bowl, along with the eggs, grated cheese,
herbs, garlic and any other herbs you might want to you.
Mix
well.
On
a grease-proof paper lined baking tray, shape the mixture into a pizza base shape.
I went for a more square shape than the traditional circle to maximise tray
space.
Bake
in the oven for 25 minutes. It should start to go a gorgeous golden brown colour.
Take
the base out of the oven. You should now have your perfect pizza base.
Spread
the tomato puree or pizza sauce over the base to the edges, covering evenly.
Top
with your ingredients and pop back into the oven for another 10 minutes to finish
off.
This
pizza was absolutely delicious and so simple to make. You honestly won’t be
able to tell that the main ingredient is cauliflower! This is a definitely
winner, even for fussy eaters!
