After an amazing 5 weeks in Okinawa (check out my blog post here) I am trying to eat
more ‘clean’ now as the rich food has made me start to feel sluggish. Whilst I love my veggies, I also love my desserts and that is the hardest for me when I am 'eating clean'.
Healthy and desserts aren’t usually two words you see next to each
other in a sentence but they certainly go together in this recipe for chocolate
tart. Thanks to the cacao powder, this chocolate tart will give you a hit of antioxidants and they are also chock full of protein.
Unlike your bar of galaxy, cacao powder isn't processed nor does it contain all the added sugars and crap that are bad for you.
Cacao powder is in fact a top health food - A 2 tbsp serving of cocoa contains just 25 calories and 1.5 g of fat and it also provides you with 3.6 g of fibre.
Cacao may lower LDL cholesterol, reduce the risk of blood clots, increase blood flow to the arteries, lower high blood pressure, boost cognitive performance and provide essential minerals such as calcium and potassium! #superfood

Ingredients:
For the base layer…
1 cup of dates (make sure they are pitted)
1 cup of granola (you can also use almonds for a gluten free crunch)
¼ cup of raw cacao powder
For the upper layer…
3 ripe bananas
½ cup raw cacao powder
2 tbsp of cashew butter
3-4 tbsp of agave nectar
In a food processor, simply blend all the bottom layer ingredients together. Blitz until finely chopped
Spread this nutty mixture in a greased pan or tray – I used a spring form tin to allow easy removal
Back
to the food processor blend together all the top layer ingredients until you
have a smooth and creamy filling
Spread this top layer ‘cream’ on to the crunchy base.

Place
in the freezer for about 30 - 60 minutes before serving!
If you don't like the thought of cacao (it does have quite a dark chocolate taste), give it a go! Personally I have never been a fan of dark chocolate so was a bit
dubious of this posing as a sweet dessert but thanks to the banana, you get
your sweetness.
