Banana and vanilla protein flapjacks

Healthy snacking is hard, especially when you are working in an office, where it is the norm for colleagues to bring in tasty and tempting treats.

Whilst everyone is tucking into the biccies and pastries, sometimes you fruit slices and ryvita just doesn't seem to be fulfilling your snacking needs!

Homemade flapjacks do make a great snack, and are so easy, so if you are looking for a great snack recipe, try these banana and vanilla protein flapjacks.

All you need this is:

150g of rolled oats
2 scoops of vanilla protein powder
1 tbsp of coconut oil
125ml of unsweetened almond milk
Few drops of vanilla essence
2 ripe bananas
One egg

First, pre-heat the oven to 160*c

In a food processor, add all the ingredients except the porridge oats

Whizz up to form a smooth, creamy banana batter

Next, add the porridge oats and whizz for another 10 seconds. You want a smooth mixture but at the same time want to retain some of the oaty chunks

Grease a square tin with butter or line with tin foil(this will make it easier to get the flapjacks out and
add the mixture to the tin and cook

After about 20 minutes, they flapjacks should be done. They'll be a delicious golden brown and cooked all the way through

(poke a knife in and if it comes out clean it is cooked)

Once cool, cut them up into slices.

Enjoy!
